Cinnamon Scones


    * 1 cup sour cream

    * 1 teaspoon baking soda

    * 4 cups all-purpose flour

    * 1 cup white sugar

    * 2 teaspoons baking powder

    * 1/4 teaspoon cream of tartar

    * 1 teaspoon salt

    * 1 cup butter

    * 1 egg

    * 4 teaspoons cinnamon 


For dusting


    * sugar

    * cinnamon


   1. Preheat oven to 350 F degrees.

   2. Spray two baking sheets with non-stick cooking spray.

   3. Combine sour cream and baking soda in a small bowl.

   4. Combine flour, sugar, baking powder, cream of tartar and salt in another bowl.

   5. Cut in butter until mixture resembles fine breadcrumbs.

   6. Combine egg with sour cream mixture, add cinnamon.

   7. Gently stir into flour mixture until moistened.

   8. IMPORTANT: knead dough briefly, no more than 10 times.

   9. Divide dough into two, place on baking sheet and pat into 3/4 inch thickness.

  10. Cut each round into 6 wedge-shaped pieces.

  11. Move scones so they are not touching (at least 3 inches), dust with sugar and cinnamon.

  12. Bake 15-20 minutes or until golden brown.

Age is not important unless you're a cheese

 




CHEESE PIMIENTO BREAD


Combine in large saucepan 

2 tbsp. soft butter

3 tbsp. flour

1 tbsp. sugar

2 tsp. salt


Stir in ...

1¼ cups milk

Cook, stirring over low heat until thickened.

Add ...

⅓ cup grated sharp flavored cheese

2 to 3 tbsp. minced pimiento

Stir until cheese is melted. Cool to lukewarm.

Mix together and add ...

¼ cup lukewarm water

I packet compressed yeast

Mix in .

3 to 3½ cups sifted GOLD MEDAL Flour

Knead and let rise twice. 


Shape into loaf (9x5×3" pan). Let rise 1½ times its size (about 30 min.). Bake.


TEMPERATURE: 375° (quick mod. oven).


TIME: Bake 45 to 50 min.


AMOUNT: 1 loaf.

C is For Cookie, and That's Good Enough For Me


 Non Gluten Ginger Cookies 

Yield: 48 Cookies

Ingredients

1 1/2 cup butter or dairy-free room temp

2 cup brown sugar packed

2 egg room temperature ideally

1/2 cup molasses (unsulphured)

2 teaspoon vanilla extract

4 cups gluten-free all purpose flour with xanthan gum (King Arthur)

2 teaspoon baking soda

1/2 teaspoon salt

4 teaspoon ginger

2 teaspoon cinnamon

1/4 teaspoon cloves

1/2 teaspoon nutmeg

large pinch pepper

Turbinado sugar for rolling


Instructions

Cream butter and brown sugar until well combined, light and fluffy, about 1-2 minutes depending on how soft the butter is.

Add egg, molasses and vanilla, mix till well combined-- it will be a caramel color.

In a separate bowl, mix flour, baking soda, salt, ginger, cinnamon, cloves, nutmeg and pepper using a pastry cutter, whisk or fork.

Add dry mix to wet mix slowly (about 1/2 at a time) and mix to combine but don't over mix.

Cover and chill the dough for 30 minutes (up to an hour) in the refrigerator. Meanwhile preheat your oven to 350 degree F.

Roll chilled dough into approximately 1 to 1 1/2 inch balls.

(Place turbinado sugar in a small bowl) Roll each ball in turbinado sugar and place on baking sheet 2 inches apart-- they will spread while baking.

Bake 11-12 minutes, until top crinkly and center of cookie looks baked.

Let rest on hot baking sheet for 10 mins or longer to cool. Enjoy!

Store in an air tight, sealed container.

I look really bad in one of those orange suits with the numbers on the back. It doesn't do anything for me

 


Orange Biscuits

¼ cup butter or margarine

1 cup orange juice

½ cup sugar

2 teaspoons grated orange peel

2 cups sifted enriched flour

3 teaspoons baking powder

½ teaspoon salt

3 to 4 tablespoons shortening

¾ cup milk

OVEN 450°

Combine butter, orange juice, / cup sugar, and orange peel; cook 2 minutes. Pour into 9 greased muffin pans.

Sift flour, baking powder, salt; cut in shortening. Add milk; stir till dough follows fork.

Knead ¼ minute; roll ¼ inch thick. Brush with butter; sprinkle with ¼ cup sugar and ½ teaspoon cinnamon. Roll as for jelly roll.

Cut 1-inch shces; place, cut side down, over orange mixture. Bake in very hot oven (450°)

20 to 25 minutes. Makes 9.

I've been on so many blind dates I should get a free dog

 


DATE CAKE


½ pound pitted dates, coarsely chopped (1½-2 cups)

1 cup boiling water

½ cup shortening

I cup sugar

1 teaspoon vanilla

1 egg

1½ cups sifted all-purpose flour

1 teaspoon soda

¼ teaspoon salt

½ cup chopped walnuts


OVEN 350F



Chop dates, boil water, stir in dates to water, stirring, for about a minute, heating thoroughly.


In a bowl, cream shortening and sugar till light. 


Add vanilla and egg to shortening and sugar: beat well.


Sift flour, soda, and salt together; add to creamed mixture alternately with mixture, beating after each addition. 


Stir in nuts. 


Bake in greased and lightly floured 13x9x2-inch baking pan at 350F  for about 25 to 30 minutes, test with toothpick.


If desired, serve with a dollop of whipped cream.

 Happy Geek White Chicken Enchiladas


8 flour tortillas 

2 cups cooked, shredded chicken

2 cups shredded Monterey Jack cheese 

3 Tbsp butter 

3 Tbsp flour 

2 cups chicken broth 

1 cup sour cream 

1 (4 oz) can diced green chilies 


Preheat oven to 350 degrees. 


Spray a 9x13 pan with cooking spray. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan seam side down. 


In a small sauce pan over medium heat, melt butter. Whisk in flour and cook 1 minute. Add broth and whisk until smooth. Allow sauce to thicken. Remove from heat and stir in sour cream and chilies.


Pour sauce over enchiladas and top with remaining cheese. Bake 20-25 minutes and then broil for a few minutes to brown the cheese.

I've wined and dined with kings and queens, and I've slept in the alley eating pork and beans.



 Bremerton Beans

1 cup chopped onion

8 slices bacon, cut up

1 clove garlic, minced

1 (16 ounce) can lima beans, drained

1 (16 ounce) can pork and beans in tomato sauce

1 (15 1/2 ounce) can red kidney beans, drained

1 (15 ounce) can butter beans, drained

1 (15 ounce) garbanzo beans, drained

3/4 cup ketchup

1/8 cup molasses

1/4 cup brown sugar, packed

1 tablespoon prepared mustard

1 tablespoon Worcestershire sauce


 Preheat oven to 375°F. 

 In skillet, cook onion, bacon, and garlic until bacon is crisp and onion is tender; drain.

 In bowl, combine onion mixture and remaining ingredients. Transfer bean mixture to 3-quart casserole.

 Bake, covered in preheated oven for 90 minutes.

(don’t giggle, this is really good, despite the name)
