The Swedish engineer who invented the zip fastener made a greater intellectual leap than many scientists do in a lifetime.

Swedish Butter Cookies

1 cup butter
1 cup sugar
1 egg
1 teaspoon vanilla
1 cup flour
1 cup potato starch

Cream butter, add sugar and cream again.

Beat in egg, vanilla.

Sift flour and potato starch, add to creamed mixture and mix until fluffy.

Chill in refrigerator.

Roll dough into small balls and place on baking sheet; flatten balls with a fork, and bake in moderate oven (375° F) 9 to 10 minutes.


Will make about 6 dozen cookies.
